Even giants like McDonald's and Burger King have not been as successful as desired in Vietnam. So what are the main causes leading to this situation? And what are the decisive factors for the success of this chain business model in the Vietnamese market? In this article, <a class=\"wpil_keyword_link\" href=\"https:\/\/dps.media\/en\/\" title=\"DPS\" data-wpil-keyword-link=\"linked\" data-wpil-monitor-id=\"240\">DPS<\/a> will answer the above question in detail.<\/span><\/p><h2 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">I. The current state of the F&amp;B chain business model in Vietnam.<\/span><\/h2><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">1. Forecast<\/span><\/h4><figure id=\"attachment_1789\" aria-describedby=\"caption-attachment-1789\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1789\" title=\" F&amp;B is one of the most \u201cvibrant\u201d sectors in Vietnam\" src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2108910778805_3aa07394931a799cf3d25db6a0b7dd66.jpg\" alt=\"predicting the development of the F&amp;B industry\" width=\"800\" height=\"449\"><figcaption id=\"caption-attachment-1789\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">F&amp;B is one of the most \u201cvibrant\u201d sectors in Vietnam with a growth rate of approximately 18% per year.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Food and Beverage (F&amp;B) is one of the most \u201cvibrant\u201d sectors in Vietnam. It accounts for 15% of GDP in 2018 and has a stable annual growth rate of 7% (<a href=\"https:\/\/www.mdpi.com\/2227-7390\/8\/7\/1140\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Wang, 2020<\/a>).<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Vietnam's F&amp;B industry in the period 2014 \u2013 2019 had a growth rate of approximately 18% per year according to <a href=\"https:\/\/baodautu.vn\/song-ngam-tren-thi-truong-fb-d116983.html\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Euromonitor<\/a>. This figure is forecast to continue increasing as economic and social development leads to improved living standards. Especially as the middle class in Vietnam is growing.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Indeed, according to calculations by <a href=\"https:\/\/vi.wikipedia.org\/wiki\/Nielsen_Holdings\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Nielsen<\/a>, Vietnam had about 33 million people classified as middle class in 2022 and this will increase to about 95 million people by 2030.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">What are the criteria that Nielsen uses to define the middle class? There are 2 criteria to identify this class. First, households with consumption spending over 15 USD\/person\/day. The other criterion is that their total spending on food and beverages accounts for 30% to 40% of total income.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Meanwhile, the predicted revenue of the F&amp;B industry is about US$665 before 2024 and with an average growth rate of 8% per year in the period 2020-2024 (<a href=\"https:\/\/www.statista.com\/outlook\/253\/127\/food-beverages\/vietnam\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Statista, 2020<\/a>).<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">2. Major \u201cgiants\u201d in the F&amp;B industry in the Vietnamese market<\/span><\/h4><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Precisely because of the enormous development potential of the F&amp;B industry, the battle for market share has never cooled down. From Golden Gate, Redsun, Huy Vietnam company and <a href=\"https:\/\/ippgroup.vn\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">IPP Group<\/a>.<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">2.1. Golden Gate<\/span><\/h4><figure id=\"attachment_1782\" aria-describedby=\"caption-attachment-1782\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1782\" title='Golden Gate - the &quot;tycoon&quot; in the F&amp;B field' src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2108910754113_3e3aa576c9084732b29d9d145c3aee6d.jpg\" alt=\"Golden Gate - the giant in the F&amp;B sector\" width=\"800\" height=\"449\"><figcaption id=\"caption-attachment-1782\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Golden Gate \u2013 the \u201ctycoon\u201d in the F&amp;B field, owning more than 300 chain stores nationwide.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Golden Gate Trading Joint Stock Company \u2013 <a href=\"https:\/\/cafebiz.vn\/chuoi-nha-hang-golden-gate-quy-mo-4000-ty-dong-co-duyen-bat-nguon-tu-so-thich-an-ngon-va-kham-pha-vung-dat-moi-20190525095227986.chn\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Golden Gate<\/a> is the company holding the overwhelming market share in the Vietnamese F&amp;B market. Currently, Golden Gate operates and owns nearly 300 stores across the country, including many famous brands loved by young people: Kichi-Kichi, Sumo BBQ and Vuvuzela, etc. The spectacular \u201ctransformation\u201d of Golden Gate is assessed by many economic experts as being due to \u201cmassive\u201d capital injection plus support for relationships with experts in the culinary field from <a href=\"https:\/\/www.sc.com\/vn\/about-us\/\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Standard Chartered<\/a> and <a href=\"https:\/\/www.mekongcapital.com\/vi\/gioi-thieu\/so-luoc-cong-ty\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Mekong Capital<\/a>.<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">2.2. Redsun<\/span><\/h4><figure id=\"attachment_1783\" aria-describedby=\"caption-attachment-1783\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1783\" title=\"Redsun - a formidable rival of Golden Gate\" src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2108910754108_89535211f1c92e2bda88e4d8d799b289.jpg\" alt=\"Redsun - a formidable rival of Golden Gate\" width=\"800\" height=\"449\"><figcaption id=\"caption-attachment-1783\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Redsun, Golden Gate's competitor in the same segment, is not far behind with 200 chain stores in 26 provinces and cities.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Considered a competitor of Golden Gate in this same segment is none other than Red Sun Trading Investment Management Joint Stock Company \u2013 <a href=\"https:\/\/vnexpress.net\/chan-dung-hai-ong-lon-dan-dau-chuoi-ban-lau-nuong-bia-tuoi-3767287.html\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Redsun<\/a>. Currently, Redsun owns more than 200 stores in 26 provinces and cities nationwide. However, Redsun's operational efficiency is not highly rated. In 2018, revenue reached over 620 billion VND, up 14% compared to 2017; however, Redsun's pre-tax profit was only 1.4 billion VND.<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">2.3. Huy Vietnam Company<\/span><\/h4><figure id=\"attachment_1784\" aria-describedby=\"caption-attachment-1784\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1784\" title='Huy Vietnam Company had to pay with its very &quot;life&quot; for mistaken steps' src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2108910754111_72c5227007887327a0260d22159bd2dd.jpg\" alt=\"Huy Viet Nam Company\" width=\"800\" height=\"449\"><figcaption id=\"caption-attachment-1784\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Huy Vietnam Company had to pay with its very \u201clife\u201d for mistaken steps in developing the restaurant chain business model.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">The beginning of Q4 2019 witnessed the \u201cdeparture\u201d of the chain business model of Huy Viet Nam Company (Mon Hue Restaurant) after more than 12 years of existence and development in the market. In addition, the company had previously succeeded with many Vietnamese culinary brands such as: Pho Ong Hung, Com Tho Chay, Pho 99, etc. However, strategic missteps in business orientation caused the company to lose ground in the market share battle.<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">2.4. Franchising<\/span><\/h4><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">It would truly be an omission not to mention a new but rapidly developing trend: franchising brands. A typical example is IPP Group with brands including: Burger King, Domino\u2019s Pizza, or Popeyes\u2026 who are also striving to win over Vietnamese tastes.<\/span><\/p><h3 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">3. Covid19 \u2013 the major \u201cshockwave\u201d for the chain restaurant business model.<\/span><\/h3><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">All the above data was very positive until the \u201cearthquake\u201d named COVID19 spread its obsession over almost all sectors. But perhaps the most affected is the F&amp;B industry.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">When the revenue of the restaurant chain business model dropped significantly compared to pre-pandemic times. However, large companies like Golden Gate had already prepared scenarios for when \u201cstorms\u201d arose. In terms of raw materials, the company was not greatly affected because from the start they had diversified import markets. In addition to updating information about the epidemic, Golden Gate's chain stores also implemented disease prevention measures to build customer trust when coming to the restaurant, such as:<\/span><\/p><ul style=\"text-align: justify;\">\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">100% of employees are required to wear masks when serving customers.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Hand sanitization.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Continuous cleaning and sanitizing in the restaurant, etc.<\/span><\/li>\n<\/ul><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">In addition, Golden Gate's quick response ability was shown by implementing a home delivery program while still ensuring the same standards as dining in. This program helped them partially secure revenue and provided new directions to develop this service if demand for at-home dining continues to rise. This is a concrete example of \u201copportunity in crisis\u201d that many people mention.<\/span><\/p><h2 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">II. Three core challenges of the chain business model that the F&amp;B industry is facing.<\/span><\/h2><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">In the previous section, DPS provided the main overview of the F&amp;B industry's status over the years and development forecasts for the next 5-year period. As well as the impact of Covid 19 on the \u201chealth status of the industry\u201d.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">In the next section, DPS will address the three main challenges that food and beverage business owners will face when pursuing the chain business model.<\/span><\/p><h3 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">1. Management mindset \u2013 The soul of the chain business model<\/span><\/h3><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Once you determine to develop a chain business model in the F&amp;B field; the first barrier for you is the mindset issue in the way of management. Two issues considered key in developing a chain model are managing product quality and simultaneously proposing appropriate management methods to maintain quality when expanding the model.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">This is actually a difficult problem for business owners when aiming to develop a chain store business. In reality, not all models in the F&amp;B field can be developed into chains. The problem lies in the fact that some products in the food and beverage business are very difficult to expand while still maintaining product and service quality.<\/span><\/p><figure id=\"attachment_1787\" aria-describedby=\"caption-attachment-1787\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1787\" title=\"Consistency in quality when developing a chain business model\" src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2109428472824_8c49145138d5802713b3e5e98a9088ae.jpg\" alt=\"Consistency in quality when developing a chain business model\" width=\"800\" height=\"449\"><figcaption id=\"caption-attachment-1787\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Synchronizing quality in the restaurant chain business model is a vital factor.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Mr. <a href=\"https:\/\/vi.wikipedia.org\/wiki\/L%C3%BD_Qu%C3%AD_Trung\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Ly Quy Trung<\/a> the founder of Pho 24, objectively assessed the business model in his autobiography. Mr. Trung stated that when expanding the system too quickly, they faced a huge challenge: how to maintain consistent quality across the entire chain of stores.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">On the other hand, even within a chain, the quality of products and services varies greatly between stores. If business owners do not seek solutions to address this, when crises occur such as the COVID-19 pandemic, it will be a test of the \u201cresilience\u201d of your business model.<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Why does inconsistency in quality appear when expanding a chain of stores?<\/span><\/h4><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">There are quite a few reasons to answer this question. DPS would like to use the Mon Hue restaurant chain business model as an example for easier visualization.<\/span><\/p><figure id=\"attachment_1786\" aria-describedby=\"caption-attachment-1786\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1786\" title=\"Ensuring uniform quality for Mon Hue dishes seems to be an impossible mission \" src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2109428489309_7024f5687fd2bbd2f3ac10899006f4fd.jpg\" alt=\"\" width=\"800\" height=\"449\"><figcaption id=\"caption-attachment-1786\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Ensuring consistent quality for Mon Hue dishes seems to be an impossible task when Hue cuisine requires meticulousness and sophistication in both flavor and presentation.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">In the restaurant chain business, the less dependent on the head chef, the better. This means the process must be standardized and the dishes must be simple and not overly complicated to prepare. Meanwhile, when it comes to Hue cuisine, customers imagine dishes with the royal Hue style, which are already elaborate and sophisticated. Therefore, preparing these dishes requires very strict quality management.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Expanding the chain model while still ensuring consistent quality for Hue dishes seems to be an impossible task. This is one of the reasons many people notice that when there were only one or two stores, the quality at Mon Hue was quite good. However, when it expanded into a restaurant chain, the quality of the dishes gradually declined.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">DPS can conclude that this is one of the fatal weaknesses of the Mon Hue business model.<\/span><\/p><h3 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">2. The value of \u201csacrifice\u201d in the restaurant chain business model<\/span><\/h3><figure id=\"attachment_1788\" aria-describedby=\"caption-attachment-1788\" style=\"width: 800px\" class=\"wp-caption aligncenter\"><img decoding=\"async\" class=\"wp-image-1788\" title='Highlands Coffee is proof of a reasonable &quot;sacrifice&quot; for breakthrough development' src=\"https:\/\/dps.media\/wp-content\/uploads\/2025\/07\/z2109436101565_320083ebb8a8eb937f3773f4741df50f.jpg\" alt=\"Highlands Coffee and the chain of beverage stores\" width=\"800\" height=\"800\"><figcaption id=\"caption-attachment-1788\" class=\"wp-caption-text\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Highlands Coffee is proof of a reasonable \u201csacrifice\u201d for breakthrough development.<\/span><\/figcaption><\/figure><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">The next challenge for the chain business model lies in eliminating redundant factors in products and services.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">\u201cSacrificing\u201d things that do not bring high economic value to the store. This is considered a solution to adjust the business model to be suitable for development and to control service quality when scaling up.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">In other words, all redundant factors must be eliminated, processes standardized; continuous training organized and technology applied to be able to create products consistently.<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">So what factors are considered redundant? There are two main factors for businesses to determine this:<\/span><\/p><ul style=\"text-align: justify;\">\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Products that do not bring high revenue or high economic value.<\/span><\/li>\n<li><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">Products that are difficult or impossible to standardize when expanding.<\/span><\/li>\n<\/ul><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">DPS will use a classic example in the F&amp;B industry when accepting the \u201csacrifice\u201d of redundant things for breakthrough development. That is Highlands Coffee. When first \u201cborn\u201d, Highlands' drink menu had up to 50 products. However, by 2019, with a scale of more than 240 stores nationwide (<a href=\"https:\/\/cafef.vn\/dai-chien-chuoi-ca-phe-highlands-quy-mo-ap-dao-the-coffee-house-tang-truong-gap-doi-de-vuot-mat-starbucks-20190612110847722.chn\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Cafef.vn, 2019<\/a>); Highlands' menu was reduced to only 18 items (<a href=\"https:\/\/www.highlandscoffee.com.vn\/vn\/san-pham.html\" target=\"_blank\" rel=\"noopener noreferrer nofollow\">Highlands Coffee, 2020<\/a>).<\/span><\/p><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">You see, in fact, if you sacrifice correctly and appropriately, the value it brings is truly \u201csweet\u201d!<\/span><\/p><h3 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">3. Training people suitable for the chain business model.<\/span><\/h3><p style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">The final factor that DPS wants to mention is training a workforce capable of managing and maintaining product and service quality during expansion.<\/span><\/p><h4 style=\"text-align: justify;\"><span style=\"font-family: tahoma, arial, helvetica, sans-serif; font-size: 14pt;\">3.1.
